To-day we hear a great deal about vitamins, minerals and other substances found in food. Do you know what the established facts about these food substances are? This is the first of a series of articles whose purpose will be to explain the nature of the different food substances and how you may be sure of including them in your everyday diet. The knowledge of the factors which contribute to good nutrition has come a long way since the beginning of this century when Grijns, a Dutch scientist, suggested that beri-beri was the result of a lack of some vital ingredient contained in the polishings of rice. Today scarcely a housewife can be found who has not read or heard something about protein, vitamins and minerals.
